BURGERS

Ultimate Turkey Burgers, with Crunchy Sweet Potato Fries, Tomatillo Green Ketchup, Spicy Roasted Red Pepper, and a Roasted Garlic Aioli

Ingredients:

​

Roasted Garlic Mayo

3 cloves garlic

1/8 cup oil

3 egg yolks

½ tsp lemon juice

¼ cup grape seed oil

pinch of salt

 

Tomatillo Ketchup:

3 tomatillos

¼ cup diced onion

½ tsp sugar

 

Spicy Roasted Red Pepper Sauce:

2 red peppers

1 red chilli

¼ cup heavy cream

salt and pepper to taste

 

Sweet Potato Fries

3 sweet potatoes

2 tbs peanut oil

2 tbs corn starch

 

 

Turkey Patty:

12 oz ground turkey

¼ cup mixed egg

1 tbs chopped cilantro

¼ cup panko bread crumbs

salt and pepper to taste

brioche buns

 

Toppings:

micro greens

sliced tomato

 

 

 

 

Directions:

 

  1. Preheat oven to 400 degrees F. Place 3 cloves of garlic with the skin on a small sheet on aluminum foil. Add 1/8 of oil, and fold together into a ball. Place in the oven and roast for 25 to 30 minutes.

  2. While your garlic is roasting start by dicing your onions. Next, heat a medium sized sauce pot on medium to high heat. While the pan is heating, start roughly chopping your tomatillos. Once heated, add in a drizzle of oil. Begin to sauté the onions, cooking till they are light brown in color. Throw in the chopped tomatillos. Turn the temperature to low heat and continue to cook for 30 to 40 minutes until the tomatillos have cooked down. Finally add in the sugar, and blend till smooth.

  3. Next, to roast your chilies, and red peppers place on the barbecue, or an open gas stove flame. Roast till lightly evenly charred, and immediately place into a ziploc bag and seal. Let sit for 10 minutes. This will steam the skin and make it easy to remove before we blend our sauce. Place your red peppers on a cutting board, and remove the skin. Roughly chop, and do the same with the chili but make sure to remove all the seeds. Place in a blender with heavy cream salt and pepper.

  4. Remove your garlic from the oven. Preheat oven to 425 degrees F. Cut your sweet potatoes into strips. Dry with a paper towel, and toss with corn starch and oil. Spread evenly on a tray. Place in the oven for 15 minutes, then increase temperature to 450 degrees F and cook for a remaining 10 to 15 minutes or until done.

  5. To make your burger patty combine all the ingredients, in a medium sized bowl. Separate into 2 6oz patties. Using a small cookie cutter cut a hole into the middle of the patty to make a “donut”. Head a medium sized saute pan, on medium heat. Once hot drizzle in oil. Place the patty in the pan and sear till golden brown on both sides, and fully cooked. Remove from the pan and set aside.

  6. For the garlic mayo, place the egg yolks, lemon juice, and salt in a blender cup. Remove the skin from the roasted garlic, and place in the egg yolks. Start to blend the mayo using a hand blender, and drizzle in the oil. Set aside.
